For this you need (for 5 sausages):

  • 500 g pork
  • 1 1/2 tsp black peppercorns
  • 1 teaspoon dried fennel seeds
  • 1 teaspoon juniper berries
  • 2 1/2 teaspoons of coarse salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 tbsp finely chopped garlic
  • Vegetable oil for frying
  • Cling film and kitchen twine

That is how it goes:

1. Mince the pork.

2. Briefly toast peppercorns, fennel seeds and juniper berries in a pan. Then crush them in a mortar with the other coarse spices.

3. Add the spice mixture as well as the onion powder and the garlic to the pork and mix everything together well. Then shape a handful of the seasoned pork into a sausage and roll it tightly in cling film; seal these at the ends with kitchen thread. Finally, place all of the wrapped sausages in boiling water and cook them in it for 8 to 10 minutes.

4. Then briefly put the sausages in ice water to cool down.

5. Remove the cling film from the cooled sausages and then fry them brown on all sides with vegetable oil. Serve the sausages, for example, with a traditional potato salad, a crunchy leaf salad and spicy barbecue sauce.
